What about the Beef!
USDA Prime, USDA Choice are the majority of what you'll see in the meat department. The higher the grade, the higher the price and the higher the fat. Fat equals flavor. People love the flavor, but fat is not good for you. Fat is created by pumping a cow up with grain until it's as fat as it can get before it goes to market. The cowboy gets paid by the pound. In fact, the cows can get so fat that they often need to be injected with antibiotics so they can make it to market alive.
USDA Prime has abundant marbling (flecks of fat within the lean) which enhances both flavor and juiciness. USDA Choice has less marbling than Prime but is of very high quality. USDA Select is very uniform in quality and normally leaner than the higher grades.
I prefer grass fed beef. It's more expensive because the cows are skinnier. Beware if the label or the butcher says, "grass fed until the last 90 days." This means the last 90 days, they pump the cow with grain.
It's all about preference. But, with my cholesterol issues, I prefer leaner meats. I'm now so used to lean meats that I can't stand fatty meats.
