T-Bones Grilled Salmon

Ingredients:

• Salmon fillet(s) (Pacific or Alaskan)

• Extra Virgin Olive Oil (EVOO)

• Coca Amino

• Soy Sauce

• Hot Sauce

• Lime or Lemon juice (optional)

• Balsamic Glaze (Modena)


Instructions:

1. Lightly coat the salmon with EVOO in a glass dish.

2. Marinade skin side up in a mixture of Coca Amino, Soy Sauce, hot sauce, and lime or lemon juice (optional). The marinade should cover most of the salmon.

3. Cover and refrigerate for at least 30 minutes or up to a couple of hours.

4. Preheat the grill to 300-400+ degrees Fahrenheit.

5. Place the salmon on the grill skin side down.

6. Cook for about 20 minutes, turning down the heat to avoid excessive flames.

7. After 20 minutes, flip the salmon and cook for an additional 2 minutes.

8. Remove from the grill, flipping it back to top side up.

9. Pour some Modena balsamic glaze over the top.


Suggested Sides:

• Grilled baked potato: Microwave for 5 minutes first, then put on the top shelf of the grill for about 45 minutes.

• Grilled vegetables (asparagus, carrots, or green onions): Drizzle with EVOO, salt, and pepper, a little lemon juice, and char on the grill for 5-10 minutes.
