You can find lollipop lamb chops either precut or in a rack. Check at the butcher counter first. The butcher will even cut up the rack for you if you want. Be sure not to get the big honkers. They're too tough.
Lay individual chops out on a tray and rub them with:
Rosemary and thyme
Salt and pepper
Put the chops a large Ziploc™ bag
Add:
EVOO
A good Balsamic vinegar
And a glaze – GA Russa Glaze is a good one, but there are others on the store shelves.
Marinate for 2+ hours.
Grill on medium high heat for 3-5 minutes per side. Get some flame going for a char, but don't overcook. Lollipop lamb chops are best charred and rare in the middle.
Drizzle with more demi-glaze, and as an option, a small amount of chopped mint leaves.
