This is a good one. Perfect appetizer to grill while you’re grilling the entree. Easy!!
Get yourself a Beef Sausage. Below is a picture of what I use. You can use any brand, but beef sausage seems to taste the best for this process.
Create a foil boat with aluminum foil
Add a thin layer of whatever oil you have, EVOO, Canola, etc. Very important so the sausage doesn't stick to the foil.
Place the sausage in the foil and roll the edges of the foil so they are about an inch from the sausage.
Slice the sausage about halfway down and about one inch apart all the way around. This helps the spice permeate the beef and creates bitesize pieces when you’re ready to serve.
Add Worcestershire, Soy Sauce, Balsamic Vinegar or whatever you have in the Fridge.
Add Jalapenos, onion, garlic, and anything spicy. I place slices of Jalapenos on top of the sausage
Shake Cayenne pepper and your favorite rub over the sausage.
Cook offset on the grill. Not over direct heat. Grill it for about 30 - 45 minutes. You will start to see a little browning on top.
Take it off the grill and out of the foil. Toss it on the Booz Board with dollops of mustards, BBQ sauce, horseradish, whatever.
