Fresh walleye from a high-end grocery store in your area. Don't buy cheap fish.
Heat your fry pan to medium heat
Add your EVOO, a chopped Shallot and butter
Season the fish with Pepper, Cajun seasoning, paprika on both sides
Put it in the pan.
Add a little white wine and almond slices.
Cook until firm and flakey, but not too long. About 5 min. per side.
Serve with your favorite rice. I use this rice because it's fast and easy....like me.
